My new favourite champagne

Veuve is now #2 and Pol Roger #3.

I purchased this shiny new adventure to follow my partner’s birthday dinner but we were given too much wine with our degustation meal to appreciate it then :p

The Bollinger Special Cuvee Brut bouquet is floral and nutty; the flavour complex and velvety as it envelopes the tongue. Dry, yet with a slightly sweet finish. The bubbles are dissolve-on-the-roof-of-your-mouth melty. I am in love.

Our Bollinger experience was a surprisingly smashing match to Trigg Pizza‘s Portofino (prawns, bacon, tomatoes, mushrooms) and Italiana (capers, pepperoni, mushrooms, black olives) pizzas.

Decadent, yes, but certainly not blasphemous given Madame Bollinger’s sentiments:

“I drink Champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it — unless I’m thirsty.”
